Chef Ashley Christensen, owner of Poole’s Diner, will take on Bobby Flay on the Food Network’s Iron Chef show.
According to the Food Network site, the show will run on the following times:

I first became a Christensen fan when she was with the now-defunct Vin. The meals at Vin were very elegant, with small portions, but well-conceived and flavorful ideas, similar to Zely and Ritz. I have only been to Poole’s once, and, frankly, I was a little disappointed. However, I am apparently one of the few who has had this experience at Poole’s.
Christensen will be opening three new restaurants on Wilmington Street, according to New Raleigh.
